Week 10 was supposed to be Russian food and week 11 was supposed to be our final but since so many of my classmates were graduating this quarter they had to take their final in week 10.  They allowed all of us to take the final week 10.

We made Borscht, Russian Style Green Beans and Chicken.

On March 17, 2011 I arrived at Pampas Palo Alto to shadow Chef Nicole (Nikki) Baverso for the day. Pampas is a modern churrascaria style restaurant. They have a rodizio style of service with fourteen different types of meat.


Chef Nikki graduated from Johnson and Wales in June 2006 with a Bachelor degree in Culinary Arts. I cooked this on wednesday night and it was delicious.  I used Dijon Mustard from Saucy Mama.  It was perfect. I loved it and more importantly, Loretta loved it!

In Management by Menu we discussed our field trip to Pezzella's. We talked a lot about formatting and style.  Do we want to use centered or left justified? Font styles and colors. There is some belief that a serif font such as times new roman is easier to read, however, I prefer in all things a sans serif font like arial.
